Cleaning Your Commercial Fryer. Why We Don’t Recommend Purchasing Used Commercial Fryers

Here at Automatic Ice Maker Company, we sell restaurant equipment.  Much of that equipment is used, and we have developed a reputation as a seller of very high-quality, well-maintained second-hand restaurant equipment.  Therefore, we are not in the habit of discouraging people from purchasing used equipment for their restaurants.  Instead, we work with clients and their budgets and help you outfit your kitchen in the most affordable and practical way possible for your budget and your needs.  However, one thing we do steer almost all clients towards is a new deep fryer for your commercial kitchen.  This is not because commercial fryers are inherently unreliable; they are not.  It is because the cleaning demands of commercial fryers are very high, and it can be difficult to know, for sure, that you are purchasing a unit that has been maintained properly.

We want to be able to purchase properly maintained commercial fryer units for resale to our used equipment customers.

We want to be able to buy commercial fryers from people that we can be confident selling to our customers as quality pieces of equipment.  In order for us to do this, we need to ensure that our customers know how to properly maintain their commercial fryers.  More than that, we need to ensure that they have an easy way to do this, because difficult maintenance routines are far less likely to be followed.

The first step is keeping the fryer clean.  Fryers should be cleaned regularly.  Ideally, they are cleaned on a daily basis, even if the oil is reused.  There are six easy steps to cleaning a commercial fryer. These steps are: 1) turn off the fryer; 2) drain the oil; 3) pour clean hot water into the fryer’s oil well; 4) use tongs or a cleaning tool to agitate the water and loosen debris in the fryer; 5) use soapy water and a scrubby to thoroughly clean the fryer parts; and 6) rinse with clean water.

Regular maintenance is also critical to keeping a fryer running properly.

You should routinely check to ensure your fryer does not have any gas leaks by spraying the hoses with a soap-based cleaner and watching for bubbles; if bubbles appear, shut off the gas and contact a service technician.  Using a fryer filter and cooking at a relatively low heat can also help preserve your machinery.
