Why Your Display Cases Matter to Consumers

If you are a small restaurant owner, you want your food to be able to speak for yourself.  If you create pastries, homemade ice creams, cupcakes, cookies, or even ready-packed sandwiches or salads, you want your customers to be able to look at them, see that they look fresh and delicious, and be able to select them with confidence.  However, as a consumer, yourself, you know that much more goes into the customer’s decision than simply the appearance of the food.  No matter how fresh and delicious your food appears, if it is on display, then the customer is also going to be assessing the quality, condition, and appearance of the display cases when assessing the quality of the food.  If something about the display cases seems inadequate, then the customer may be hesitant about purchasing the food.

Display cases should look clean.

Obviously, the most important consideration in a display case is that the display case appear clean.  When a display case looks dirty, then customers begin to have doubts about the cleanliness of your kitchen.  If a display case has glass, this means keeping the glass spotless, which can be a time-consuming task because customers love to touch the glass and smudge it.  However, cleanliness goes beyond the appearance of the glass.  The case should be kept free of crumbs and other debris.  If there are any spills in the case, they should be cleaned up promptly and thoroughly, because wills attract crumbs, mess, and even insects and other vermin.  You want to make sure that your customers look at where you store your food and see a spotless environment.

The appearance of clean is just as important as actually being clean.  If you have old or run down equipment, it may appear dirty, even when it is clean.  Is there any rust or other corrosion of any sort on your equipment?  If so, the customers may interpret the equipment as being dirty.  It is important to periodically assess your display cases as if you were a customer.  Do they display your food in an attractive and appetizing manner?  If not, can you fix that by rearranging the way that you have stored the food or is a more serious fix in order?

Display cases should extend the theme of your restaurant and your food.

Next, you should assess whether the visual style of your display cases is congruent with the rest of your restaurant.  Most display cases are generic enough to go in almost any type of restaurant, but some restaurants are so stylized that they would be best served by equally stylized displays.  Likewise, some displays are so stylized that they can actually clash with their surroundings.
