Fall is here and with fall and winter come a heavy demand for soups, bisques, gumbos, and chowders as well as dishes made with sauces that require you to use stocks in their preparation. What that means for your kitchen is that you will probably need to have at least one and potentially multiple stock pots cooking at most times, but devoting burner space on your normal range or griddle is impractical. They are pots and ranges, and they can come with a single burner for a smaller kitchen or with multiple burners if you have the space and need multiple burners. What surprises many people who are designing a commercial kitchen for the first time is how easy it is to fit a designated stock pot burner into the design of a commercial kitchen. They simply are not that large. A single-burner unit starts out at under two cubic feet, which means it not only takes up little floor space, but also that, with a large pot on the burner, it will be at a reasonable height for cooking.

Of course, commercial chefs are not the only people who might have an interest in commercial stock pots. Many of us entertain by throwing seafood boils in the backyard, where we cook local shrimp, lobster, or crabs in a big pot of boiling water. As the seasons change, so does the menu, and boiled seafood might become gumbo, soup, or chili for tailgating season. There are non-commercial single-burner propane cooking units available for tailgating applications at sporting-goods places, but the reality is that they offer little control over temperature making them one-shot wonders. If you want to be able to do more complex cooking, they simply are not designed to suit your needs.
